Fred Wright

About the Instructor,
Fred Wright, MCFE, CEC

Fred Wright has been in the food service industry for 28 years, starting as a dishwasher and working his way up to Culinary Educator. Fred has taught Culinary in Reno, Nevada at Truckee Meadows Community College and is currently at the Academy of Arts, Careers and Technology. He has also been teaching ServSafe Food Protection Manager Courses and ServSafe Alcohol Courses for more than 7 Years. Fred believes that education in the food protection area will continue to help the food service industry thrive now and into the future.

Nydia Ekstrom

A native of Buenos Aires, Argentina, Nydia Ekstrom has over 38 years experience in the food service industry. She is very active with the Navy’s Adopt-a-Ship Program and has served as an IFSEA Military Traveler. She has worked for Unilever Food Solutions for 25 years. Nydia is a Certified Food Executive and Certified Executive Chef..

About the Instructor,
Chef Craig O’Brien

Chef Craig O'Brien has enjoyed 30 years of cooking that began with a traditional apprenticeship and then saw work around the US and Caribbean. His experience includes a strong mix of Culinary experience and technical interests. He has worked with meats and proteins in recent years, and now concentrates on Military Rations Development. Known as an excellent presenter, his lectures are always enjoyed and appreciated.

Patrick Beach

About the Speaker,
Patrick Beach

Patrick Beach received a Master of Science in Administration from Central Michigan University (1993) and a Bachelor of Science in Hospitality Management from Grand Valley State University (1985). He served as an adjunct professor at Wayne County Community College (MI) and Schoolcraft College (MI) teaching courses in Food and Beverage Management, Dining Room Operations, Information Systems. He has presented seminars on service skills, employee and organizational development, cooking and management. He has also served as an administrator and manager in the restaurant industry. Mr. Beach is a member of and served on the Boards of numerous professional organizations including the Council of Hotel, Restaurant, and Institutional Educators, the Retailer Bakers of America, the International Foodservice Executives Association, the American Culinary Federation and the National Restaurant Association. Mr. Beach traveled with the United States Navy as an Evaluator of Navy food services in 1998 & 2002. He also worked with the United Stated Army in 2011 visiting 12 garrison mess halls.
